María Rosa Oidor runs her family farm, Los Nogales (“the walnut trees”), together with her husband, Alfonso Pillimué, and their four children.

She originally planted Caturra, Typica, and Tabi, but later made the difficult choice to renovate the entire farm and replant solely with Pink Bourbon — a variety with Ethiopian heritage, known for its floral, elegant cup. At roughly 2,000m above sea level, the farm’s high elevation helps this more disease-sensitive variety thrive, and allows the cherries to ripen slowly, building higher sugar concentration for a sweeter, more complex cup.

This lot is beautifully layered, with juicy plum, red apple, and cane-sugar sweetness.
