What is your roast profile?
We approach our roast not with a preconceived idea of whether the coffee should be meant for filter or espresso, but with the intention of letting the roasting process best represent the coffee. This results in a roast profile that is well-developed and suitable for a wide range of brewing methods. It shifts the conversation away from roasting for specific brew methods and toward expressing the coffee itself in the way you like. This approach has led to many delightful discoveries and experiences.
Optimal brewing period?
Most of our coffees benefit from at least a week of rest. During this period, CO₂—a natural byproduct of roasting—gradually escapes from the beans, resulting in more consistent brews and a balanced, expressive cup. The coffee continues to develop and typically reaches its peak in extraction around the fourth week.
