Hacienda Sonora is a family-run farm in Costa Rica’s Central Valley, resting at the foot of the Poás Volcano in Carrillo, Alajuela.
In 1999, during a period of historically low coffee prices, owner Alberto invested in a mill so the farm could process its own coffee and focus on quality. This move made Sonora one of the early pioneers of Honey and Natural processing in the region. Today, all of its coffees are processed through these methods to bring out distinct sweetness and vibrant fruit character across the varieties grown on the farm.
Centroamericano H1 is an F1 hybrid born from Sarchimor T-5296 and the wild Rume Sudan variety, propagated through tissue-culture cloning. It’s now widely grown in Central America for its resilience and excellent cup potential.
This coffee is wonderfully versatile across different brewing methods — as a black coffee, with milk, or as a pour over. Expect a caramel-like sweetness with underlying notes of stewed berries and grape.

Our coffees benefit from resting for a minimum of 2 weeks after roasting. The flavour profile continues to develop, with peak expression usually between the 4th and 5th week.
Roasting Schedule
Orders are consolidated every Thursday and roasted fresh in small batches on Friday.
Orders placed after Thursday may still be fulfilled within the same week, subject to stock availability. Otherwise, they will be included in the following week’s roast.

All orders are collected by SPX Express on Saturday.
Delivery is typically attempted between Sunday and Wednesday.
