Guatemala - Valle De Volcanoes
Guatemala’s volcanoes sit in a line across the southern part of the country. Agua, Fuego, and Acatenango are three active volcanoes that make up the Valle de Volcanes, or Valley of Volcanoes. They frame the old colonial city of Antigua in the central highlands.
The climate in Antigua, and Guatemala in general, is often described as an “eternal spring”, with subtle changes in weather. Coffee thrives in the region, bolstered by the natural conditions. Volcanic soil is known for its high nutrient density and contains pumice– porous rock that improves aeration and drainage. Its porosity also acts like a sponge to retain moisture within the soil, particularly during drier seasons when rainfall is low.
Producers and agents in Antigua that work with UNEX (Guatemala) S.A. deliver cherries to the company’s mill in Santa Bárbara, in the Alotenango department. Marketed under the Valle de Volcanes brand, the coffee comes from 26 women producers under UNEX’s Farmer Aid initiative targeting four main pillars of community care: health, education, sustainability, and climate change.
Optimal Brewing Experience
We enjoy our coffees across different brewing methods. We recommend resting them for at least 2 weeks after roasting, with around 3 weeks being ideal for espresso.
As a general reference, without taking into account other variables such as equipment and water composition, we use the following brew temperatures in our shop:
Pour-over
88–90°C for anaerobic and naturally processed coffees
90–92°C for washed coffees
Espresso
91–93°C
Roasting & Shipping Schedule
We roast fresh every Wednesday or Thursday, and orders are collected by SPX Express on Friday or Saturday. Delivery is typically attempted between Sunday and Wednesday.
