Ethiopia - Urabeast Guji G1
This coffee comes from the Urabeast location in Guji, Oromia, where smallholder farmers cultivate coffee alongside crops such as false banana and vegetables. Most farmers own less than a hectare of land, making coffee an important source of additional income.
Working closely with the washing station, Primrose S.P. PLC supports farmers through agricultural guidance and quality-focused practices while paying premiums for well-harvested cherries.
After harvest, the ripe cherries undergo a Mosto fermentation. Following an initial fermentation, the juice from the coffee cherries—known as mosto—is introduced for a second fermentation to encourage greater sugar development before the coffee is dried slowly on raised beds.
The result is a coffee with remarkable sweetness, vibrant fruit character, and beautiful complexity.
We brewed this behind the bar today, 29 June, using a roast from 10 June. It tasted a lot like grape candy, with underlying raspberry acidity, delicate florals, and beautiful wine-like complexity.
Optimal Brewing Experience
We enjoy our coffees across different brewing methods. We recommend resting them for at least 2 weeks after roasting, with around 3 weeks being ideal for espresso.
As a general reference, without taking into account other variables such as equipment and water composition, we use the following brew temperatures in our shop:
Pour-over
88–90°C for anaerobic and naturally processed coffees
90–92°C for washed coffees
Espresso
91–93°C
